Coriander-Crusted Fish

I like to make this with any white fish. Favorites are halibut and cod. Coriander is great for lowering bad cholesterol (LDL and raising good cholesterol (HDL). Cooking with coconut oil is a great way to get healthy fats into your diet.

Serves 2


Ingredients

  • 2 fish filets about 6 ounces each (I prefer a white fish like halibut or cod)

  • Salt

  • 1/2 cup coriander seeds

  • 2 tablespoons coconut oil

Directions


Pre-heat oven to 375 degrees F.


Ground the coriander seeds with a mortar and pestle or spice grinder. Or, if you are like me and don't have one, I put them into a baggie and smash them with a heavy object. (I don't like them to be too grounded because I like the crunch of them on top of the fish.)


Coat the top of the fish with the salt and the ground coriander.


Heat a cast-iron pan and add the coconut oil. Place the filets coriander side down and cook for 2-3 minutes. Flip the fish over (trying to keep the coriander on top of the fish) and then place in the oven for another 4-5 minutes.


Serve with a nice salad or side of veggies!
